Gluten Free Cranberry Bread Recipe is a good recipe for gluten free folk. It stays quite freh for 3-4 days. Kids will enjoy this in the lunch box. ANother good gluten free recipe for your collection.

Ingredients:

  • 1½ cup rice flour
  • ¼ cup cornstarch
  • ¼ cup tapioca flour
  • 1½ tsp xanthum gum
  • 1 Tbsp baking powder
  • ¾ tsp Salt
  • ¾ cup cranberry juice
  • ¼ cup Water
  • ¾ cup orange marmalade
  • 1 tsp cider vinegar
  • ¼ cup oil
  • 1 cup cranberries - frozen or fresh

  1. Preheat oven to 350 degrees and lightly grease a large loaf pan.
  2. In a large bowl combine the flours, cornstarch, xanthum gum, baking powder and salt.
  3. In another bowl combine the cranberry juice, water, marmalade, vinegar, oil and eggs. Mix together with an electric mixer.
  4. Make a well in the center of the flour mixture and pour in the liquid. Mix just till combined. Fold in the cranberries.
  5. Pour into the prepared loaf pan and bake for 60 minutes or until done. Cool on a wire rack.
