Ingredients:

  • 1 cup rice flour
  • 3 eggs
  • 1 cup potato starch
  • ½ cup Sugar
  • ½ cup soy flour
  • ½ tsp Salt
  • 3 tsp baking powder
  • ½ cup corn oil
  • 4 small ripe bananas (mashed)
  • 2 Tbsp water

Directions:

  1. Pre heat your oven to 350f
  2. Mix flours, starch and baking powder.
  3. Blend together eggs, sugar, salt, oil and water.
  4. Blend in the mashed bananas.
  5. Stir in the dry ingredients.
  6. Pour into an 8 1/2 x 4-inch loaf pan.
  7. Bake at 350f degrees for 1 hour.
