This is a great recipe to use up over ripe bananas, which there always seems to be lying around when there are kids in the house. You can freeze these for kids lunch box's also.

Ingredients:

  • ¼ cup Olive Oil or other
  • 2 cup Self Raising Flour
  • ½ cup Castor sugar
  • ½ cup Milk
  • 1 Eggs
  • 3 Ripe Bananas
  • 1¼ cup Chocolate chips
  • 1 tsp Baking powder

Directions:

  1. Pre heat oven to 200c
  2. Prep muffin cup in the tins
  3. Into a large mixing bowl put the egg, oil, sugar, chocolate chips, B/Powder, banana's and milk and mix well together
  4. Now simply fold in the flour with a spoon until just blended together. Dont over mix as this may toughen the muffins
  5. Spoon into muffin cups and cook for 15-20 min. They should just be firm. Leave in the tins for 5 min before cooling on a wire rack.
  6. You can freeze these no problems. Great frozen and into a lunch box, they will be fine by the time it comes to eat them.
